My mother gave me the book I’d been coveting for Christmas.
Eataly: Contemporary Italian Cooking is a wonderful new addition to my cookbook library. There is a quote in the forward by Wendell Berry that I love, “Eating is an agricultural act.” I need to remind myself of this periodically this in my food choices.
I have already made a few of the pasta dishes, (which proved popular in our pasta fixated household), and I have marked many more recipes to try. Some classical, some contemporary, and some that are contemporary twists on classical recipes.
I’m generally quite flexible when I cook, I made this pasta the other day with chickpeas instead of zucchini because I didn’t feel like going to the grocery store. Today I made it again, this time with zucchini, but with Rotelle pasta instead of Garganelle. There is a footnote in the recipe that recommends substituting artichokes for zucchini for a more “pronounced flavor”. I will have to try this with artichokes next time…
Anyhow, this dish is quick and easy to make, adaptable, and very tasty.
Garganelli Pasta with Sausage and Zucchini
from Eataly (by Phaidon)
4 pork sausages
1 1/4 cups white wine
extra virgin olive oil
1 red onion, finely chopped
1 package garganelli or other short pasta
2 zucchini (courgettes) sliced
salt (and pepper!)
Skin the sausages and crumble the sausage meat into a bowl. Pour over half of the wine and mix well.
Heat a drizzle of oil in a frying pan, add the onion, and cook over medium heat until golden brown. Pour over the remaining white wine, add the sausage meat, and cook for 10 minutes, or until well cooked and golden brown.
Meanwhile, cook the pasta in a large pan of boiling, salted water according to the package directions until al dente, adding the zucchini 3 minutes before the end of the cooking time. (I chose to sauté the zucchini with the sausage instead) Drain well.
Transfer the drained pasta and zucchini to the skillet with the sausage meat and cook over medium heat for 4-5 minutes until well mixed and heated through.
Serve very hot.
