I’ve been exploring different chia seed recipes and am finding that they work especially well in puddings. Here is a new and interesting chia seed recipe that I discovered on The Full Helping.
2 cups almond milk
2 tablespoons maple syrup or other sweetener
1 teaspoon vanilla extract
1 teaspoon matcha powder
6 teaspoons chia seeds
Blend the milk, sweetener, vanilla, and matcha together in a blender till smooth.
Add the chia seeds and mix well.
Refrigerate and let the chia seeds absorb into the liquid for at least half an hour.
The pudding needs to be well mixed before and after refrigerating so that the chia seeds don’t clump together.
Serve topped with fresh berries.
