So chia seeds are the new buzz food and I bought some one day in the grocery store. Since I’d never cooked with chia before, they sat in my kitchen for a while. Recently, I enjoyed a wonderful dessert at one of my favorite restaurants in Barcelona (Flax & Kale) called “Coco Masala Chia Chai” and I set out to make a similar soupy dessert.
Mango Coconut Chia Recipe:
1 can coconut milk (blend if necessary, it should be creamy)
4 tablespoons chia seeds
4 tablespoons maple syrup (adjust the sweetness to your taste)
1 teaspoon vanilla extract
1 fresh mango, peeled and cut into pieces
That’s all, I threw it all in a bowl and let the chia seeds absorb the liquid. They swell up quite a bit after half an hour. Serve chilled. Yummy!
My sister, who lives in Santa Barbara, says that the native American tribe of the Chumash indians used to eat chia before undertaking a long trip because of the filling and nutritional properties.
Now for a quick outline on the benefits of chia seeds:
low calorie, high nutrient, full of anti-oxidants, protein, and fiber…
gluten free, high in Omega-3 fatty acids, and the list goes on and on.
