I was recently in Chicago and around the corner from my apartment there was a

Le Pain Quotidien café. Le Pain Quotidien is a Belgian bakery and café chain that serves brunches and light, delicious and healthy foods. My husband, who is Belgian, (BTW, I am Belgian too, one of the many advantages of marrying a European!) first took me to a LPQ in Brussels, and we have since enjoyed many meals in Paris and other cities where they have branches. If you ever have the opportunity to try a snack or lunch at one of their cafés, I highly recommend LPQ!

Anyhow, while in the Chicago café, I was lingering over their cookbook…I love it when a cookbook inspires me and I want to make everything. Chia seeds are my latest curiosity, and since the success of my Chia-Mango dessert,(http://www.maiamingdesigns.com/single-post/2016/11/15/Chia-Mango-Dessert)

I’ve been searching for more chia recipes, so this one caught my eye.

I love blood oranges and this seemed like a fresh and interesting way to combine yogurt with blood oranges and chia.  This is quite simple to make, the most difficult part was cutting up the oranges without the pith, and even that was not much of an obstacle. I also mixed in the yogurt whereas the original recipe layers the oranges over yogurt over the chia mixture. Enjoy!

Blood orange and yogurt with Chia seeds

(2 servings)

4 teaspoons chia seeds

1/2 cup (125 ml.) blood orange juice

1 tablespoon honey or other sweetener

2 blood oranges, peeled and segmented without pith

1/2 cup greek yogurt (125 g.) or other natural yogurt

Mix the chia seeds, blood orange juice and honey together in a bowl and refrigerate for half an hour or more. This lets the chia seeds absorb the juice and become like tiny, soft pearls.

Cut the oranges into segments and remove the pith and membrane.

Mix the yogurt well into the chia mixture and divide into two bowls.

Top each bowl with the blood oranges and serve.

A great breakfast!

Chia seeds are rich in protein, essential fatty acids, and fiber. All my girlfriends are putting them in their smoothies and breakfast cereals these days, and I buy a lovely chia seed bread at our local bakery. Apart from being healthy and great for digestion, chia seeds also really sustain and keep you full for a long time. So they make a great breakfast ingredient.
